Rhubarb Cake

             1 1/2 cups brown sugar                           1 egg
         1/2 cup oil                                            1 1/4 cup buttermilk
         2 cups flour                                           1/2 tsp salt
         1 tsp soda                                            2 cups cut up rhubarb
        1/2 cup sugar                                         1 tsp cinnamon
        1/2 tsp salt

Cream sugars and butter.  Add remaining ingredients and mix until well blended.  Bake in 12x9 cake pan at 325 degrees for 45 minutes.  Drizzle top with thin icing or sprinkle with powdered sugar.


Sweet Pickles

3 cups apple cider vinegar
1/4 cup salt
3 cups sugar
3/4 t. tumeric
1 1/2 t mustard seed
6# cucumbers sliced or speared
6 onions

Boil mixture.  Place cucumbers into jars and pour hot mixture over cukes leaving 1/4" headspace.  Immediately put on flats/rings and tighten.  Hot pack in hot water canner for 15 minutes for quart jars.  


Cheeseburger Soup

1 lb hamburger                                                   1 onion
3/4 cup carrots chopped                                      3T butter
4 cups chicken broth                           4 cups diced potatoes
1/4 cup flour                                      8 oz velveeta cheese
1 1/2 cup milk                                    1/4 cup sour cream

Cook hamburger in large saucepan. Do not drain.  Add butter and flour.  Add broth and whisk until smooth.  Add potatoes and carrots.  Cover and cook (slow boil) about 15 minutes or until veggies are tender.  Consistency should thicken as cooked. Reduce to simmer.  Add cheese, milk and sour cream.  Ready to eat!

Homemade Noodles
4 eggs                                           1/4 cup milk
pinch of salt                           flour until stiff dough
cooked beef roast or chicken in small pieces
Mix eggs, milk and salt.  Add flour while mixing with fork until dough is stiff enough to roll out.  On heavily floured surface roll out dough until 1/8" or so thick.  You can roll thicker or thinner depending on your noodle preference.  Allow rolled dough to dry at least 2 hours.  The dryer it is the easier to cut the noodles and separate it is.  When dry cut an "x" through the middle to cut into 4 sections.  Roll up each section into a log and start cutting noodles about 1/2 inch wide.  After all cut toss noodles to separate them.  In large pot boil beef or chicken broth or bouillon.  When rapid boiling add noodles and turn down heat to medium.  Add cooked beef roast or chicken.  Continue to boil 20 minutes or until noodles are tender.  Reduce heat to low and enjoy!  This amount I make feeds a family of 6.

Salsa
4 cans diced tomatoes or 2 medium sized fresh tomatoes chopped
3 bunches green onion or 1 small red onion
fresh cilantro to taste- chopped fine
1/8 tsp of garlic salt
few shakes of salt and pepper
Mix all ingredients in large bowl and enjoy with your favorite tortilla chips!




Colorful Bean Dip
1 can each red beans, black beans, black-eyed peas drained
2 cans petite diced tomatoes
1 bunch green onions chopped
1/2 bunch fresh cilantro chopped
1/3 -1/2 cup italian dressing
1/2 large green pepper chopped

Mix all ingredients in bowl and let sit in refridgerator 2 hours to marinate.  Very tasty served with tortilla chips!

Southern Lime Pickles
7# cukes thick sliced                               2 gallons water 
1 cup picling lime                            8 cups white vinegar8 cups sugar                                              1 teas. salt
2 teas. mixed pickling spices
1.  Soak cukes in water and lime mixture overnight or at least 4 hours. (Use crock or enamel NOT aluminum) 
2.  Remove from lime water and rinse 3x in fresh cold water.  Soak 3 hours in ice water. 
3.  Combine all other ingredients and bring to low boil.  Stir until sugar dissolves.  Remove from heat and add to cukes.  Soak 5-6 hours or overnight.
4.  Boil slices in syrup 35 minutes.  Fill steril jars with slices and pour syrup over slices leaving 1/2" headspace.  Cap each jar.
5.  Process quarts 15 minutes in hot water canner.  Test for airtight seals when removed.


Homemade BBQ Sauce

          1 sm. onion minced                                      1 cup ketchup   
          1/2 c. brown sugar                                       1/2 c. water
          3 T. worchestershire sauce                         few drops smoke flavor
             dash of salt

Mix all ingredients in sauce pan.  Heat to boil then turn to low.  Add shredded pork or beef.  This recipe will do about 2# of meat.  Use more or less depending on your preferences.
